Broccoli Cheddar Soup

INGREDIENTS

  • 5 tablespoon butter
  • ½ medium onion, finely chopped
  • ¼ cup flour
  • 2 cups half and half
  • 2 cups chicken stock
  • 2 cups fresh broccoli
  • 1 cup carrots, julienned
  • 12 ounces grated sharp cheddar cheese
  • Salt and pepper to taste

INSTRUCTIONS

Saute onion in butter, whisk in flour over nedium heat for 3-4 minutes

Slowly whisk in chicken stock and half and half. Simmer for about 20 minutes.

Add the broccoli and carrots. Simmer 25 minutes until broccoli and carrots are tender.

Add salt and pepper and cheese.
