Potato Pesto Soup

INGREDIENTS

  • 4 slices of bacon, finely chopped
  • 2 tablespoons butter
  • 3 lbs potato, red or Yukon gold, skin on chop to small cubes
  • 1 medium onion, finely chopped
  • 2 ½ cups chicken stock
  • 2 ½ cups milk
  • ¾ cup heavy cream
  • 1 container pesto

INSTRUCTIONS

Saute the bacon in a large pan. Add butter, potatoes and onions and cook about 12 minutes stirring frequently.

Add the chicken stock and milk bring to a boil, lower heat and simmer 10 minutes or until potatoes are cooked.

Add heavy cream and pesto, simmer 5 minutes.
