Mexican Street Corn

INGREDIENTS

  • 1 tablespoon olive oil
  • 3 cups of corn
  • 2 tablespoons of mayonnaise
  • 2 ounces queso fresco
  • 1 lime
  • ½ teaspoon salt
  • ½ teaspoon pepper

INSTRUCTIONS

Heat olive oil in a skillet on medium high heat, add corn and saute about 5 minutes.

Remove pan from heat, stir in mayonnaise, queso fresco, juice of a lime, salt and pepper.
