INGREDIENTS
- 2 tablespoons canola oil
- 1 lb boneless chicken breast cut into bite size pieces
- 1 small onion, finely chopped
- 2 tablespoons taco seasoning
- 1 can black beans
- 1 can Rotel tomatoes with green chiles, undrained
- 1 cup shredded Mexican cheese (cheddar and Monterey Jack cheese)
- Chopped cilantro
INSTRUCTIONS
Heat oil in a large skillet over medium high heat. Add chicken cook 3 minutes stirring occasionally. Add onion and taco seasoning cook 2 more minutes. Stir in black beans and undrained rotel tomatoes. Bring to a boil.
Stir in the cheese. Top with cilantro.
Serve on top of rice, or in a burrito.
