Chicken Burrito Skillet

INGREDIENTS

  • 2 tablespoons canola oil
  • 1 lb boneless chicken breast cut into bite size pieces
  • 1 small onion, finely chopped
  • 2 tablespoons taco seasoning
  • 1 can black beans
  • 1 can Rotel tomatoes with green chiles, undrained
  • 1 cup shredded Mexican cheese (cheddar and Monterey Jack cheese)
  • Chopped cilantro

INSTRUCTIONS

Heat oil in a large skillet over medium high heat. Add chicken cook 3 minutes stirring occasionally. Add onion and taco seasoning cook 2 more minutes. Stir in black beans and undrained rotel tomatoes. Bring to a boil.

Stir in the cheese. Top with cilantro.

Serve on top of rice, or in a burrito.
