Lemon Squares

CRUST

• 2 C. flour
• 1/2 C. confectioners sugar
• 1 C. butter

Mix together flour, conf. sugar and butter until creamed. Press into a 13 x 9 x 2″ pan. Bake at 350 degrees for 20-25 minutes, until lightly browned.

FILLING

• 2 C. sugar
• 4 eggs
• 1/3 C. lemon juice
• 1/4 C. flour
• 1/2 tsp. baking powder

Put eggs, 2 C. sugar and lemon juice in blender until thick and smooth. Sift 1/4 C. flour, baking powder and add to the blender. Mix well and pour over crust. Bake at 350 degrees for 25 minutes. Sprinkle with conf. sugar. Let cool. Cut into squares.
