CAKE INGREDIENTS
- 4 C. coarsely chopped apples
- 1 3/4 C. Sugar
- 2 eggs
- 1/2 C. oil
- 2 tsp. vanilla
- 2 C. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 C. chopped nuts
LEMON GLAZE INGREDIENTS
- 1 C. conf. sugar
- 1 1/2 Tbsp. lemon juice
- 1/2 tsp. vanilla
- 1 Tbsp. corn syrup
INSTRUCTIONS
Combine apples and sugar. In a large mixing bowl, mix eggs, oil and vanilla; add combined dry ingredients alternately with apple mixture. Stir in walnuts. Bake in a greased 9×13 pan at 350 degrees for 45 to 50 minutes. If desired, drizzle top of cooled cake with lemon juice.
