Scallops in Wine Cheese Sauce

INGREDIENTS

  • 1 1/2 lbs. sea scallops
  • 1/2 C. dry white wine
  • 1/2 tsp. salt
  • 1 dash cayenne pepper
  • 1 tsp. instant minced onion
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 C. heavy cream
  • 1 C. grated sharp cheese
  • 1/2 C. buttered soft bread crumbs

INSTRUCTIONS

Chop scallops in 1/2″ pieces. Place scallops, wine, salt, cayenne pepper and onion in a saucepan. Bring to a boil, cover and simmer 10 minutes. Drain, reserving 1 C. broth. In a separate pan, melt butter and blend in flour. Add the reserved broth and cream. Cook, stirring constantly, until thickened. Stir in cheese and scallops. Fill individual baking dishes, top with the bread crumbs and bake at 400 degrees for 10 minutes.
