
INGREDIENTS
- 1 lb. penne pasta (or your favorite pasta)
- 1/4 C. extra virgin olive oil
- 2 Italian sausages
- 4 cloves garlic – minced
- 1/2 tsp. crushed red pepper
- 1 (29-oz.) can crushed tomatoes
- 3/4 tsp. salt
- 2 Tbsp. vodka
- 1/2 C. heavy cream
- chopped parsley
INSTRUCTIONS
Prepare pasta according to package. Meanwhile, heat olive oil in a lg. skillet over moderate heat. Remove sausage casing and add meat to pan. Cook until browned, breaking up the meat as it cooks. Add garlic and red pepper, stir well. Add tomatoes and salt, bring to a boil. Reduce heat and simmer 15 minutes. Stir in vodka and cream. Bring back to a boil. Stir in cooked pasta and parsley; simmer 1 minute.
