Pasta Amatriciana

INGREDIENTS

  • 6 slices bacon
  • 1/2 C. onion – finely chopped
  • 1 tsp. minced garlic
  • 1/2 tsp. crushed red pepper
  • 1 (29-oz.) can diced tomatoes
  • 1 Tbsp. chopped parsley
  • 1 lb. pasta

INSTRUCTIONS

Prepare pasta according to package directions. Cut bacon slices into 1/2″ pieces. In large skillet, cook bacon until crisp. Set aside bacon. Discard all but 2 Tbsp. of the bacon fat. Add onion to skillet and cook about 3 mins. Add garlic, red pepper and tomatoes, and cook 15 minutes. Stir in parsley and bacon. Toss with cooked pasta.
