Lasagna

INGREDIENTS

  • 1 lb. Italian sausage
  • 2 lb. ground beef
  • 1 clove minced garlic
  • 4 (6-oz.) cans tomato paste
  • 2 cans crushed tomatoes
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • 1 1/2 tsp. sugar
  • 4 tsp. salt
  • 1 tsp. black pepper
  • 2 lbs. ricotta cheese
  • 3 eggs
  • 1/4 C. chopped parsley
  • 2 lbs. mozzarella
  • 1 lb. Lasagna noodles
  • 1 Tbsp. olive oil

INSTRUCTIONS

In Dutch oven over medium heat, cook sausages until browned. Remove from pan, cool slightly, chop fairly small. Discard fat from pan, brown ground beef and garlic. Add cooked sausage, tomato paste, tomatoes, salt pepper, basil, oregano and sugar. Simmer 25 minutes, stirring frequently.

Cook lasagna noodles according to package directions, add olive oil to water to prevent sticking. Drain and set aside.

In a medium bowl, combine eggs, ricotta, and parsley. Mix well with a fork.

Preheat oven to 350 degrees. Grease two 9 x 13″ pans. Layer into each: 1 C. sauce, noodles, sauce, ricotta, mozzarella — repeat. Top with layer of noodles, sauce and mozzarella. Bake for 1 hour. Allow to sit 10 minutes before cutting.
