Cabbage Rolls

INGREDIENTS

  • 1 head cabbage
  • 1 1/2 lb. ground beef and/or pork
  • 3/4 lb. white rice – uncooked
  • 1 lg. onion – finely chopped
  • 1 tsp. parsley flakes
  • 1 qt. tomato juice
  • salt and pepper

INSTRUCTIONS

Par boil cabbage and cut off leaves. Combine meat, rice, onion and parsley. Add salt and pepper to taste. Place a spoonful of filling on each cabbage leaf and roll up. Hold roll together with toothpicks. Place extra cabbage leaves in bottom of backing pan. Arrange cabbage rolls on top. Pour tomato juice over, making sure that the cabbage is completely covered (add water or more tomato juice if necessary). Bake at 350 degrees for 1 hour.
