INGREDIENTS
- 3 Tbsp. olive oil
- 1/4 C. finely chopped onion
- 4 cloves minced garlic
- 1 can crushed tomatoes (or 6 fresh chopped tomatoes)
- 1 tsp. crushed red pepper
- 1 Tbsp. chopped parsley
- salt to taste
- pinch of sugar
INSTRUCTIONS
Heat two Tbsp. of oil in heavy skillet. Add the onion and garlic and saute over medium heat for 5 minutes. Remove onions from oil, set aside. Add the remaining oil, turn heat to high and add the tomatoes. Saute for one minute, add the crushed peppers and onions. Lower the heat, add salt, sugar and parsley. Simmer for 20 minutes. Pour completed sauce over cooked pasta and toss.
