Pepper Steak

INGREDIENTS

  • 3 C. hot cooked rice
  • 1 can crushed tomato
  • 1 lb. lean round steak, 1/2″ thick
  • 1 Tbsp. paprika
  • 2 Tbsp. butter
  • 2 cloves crushed garlic
  • 1 C. slice onions
  • 2 green peppers, sliced
  • 1 1/2 C. beef broth
  • 2 Tbsp. cornstarch
  • 1/2 C. both water and soy sauce

INSTRUCTIONS

While rice is cooking, pound steak to 1/4″ thickness. Cut into 1/2″ strips, sprinkle meat with paprika ad allow to stand while preparing other ingredients. Using a lg skillet, brown meat in butter. Add garlic, broth, peppers, onion and tomato. Cover and cook 20 mins. Blend cornstarch, water and soy sauce, and stir into meat mixture. Cook until broth starts to thicken. Serve over rice.
