INGREDIENTS
- 1 4 to 5 lb. stewing chicken
- 3 Tbsp. your favorite dry BBQ rub
- 1 12-oz. can of beer
- 1 clove garlic, cut up
INSTRUCTIONS
Remove and discard the fat and giblets from inside the chicken. Rinse the chicken under cold running water; then drain and blot dry, inside and out.
Sprinkle 1 Tbsp. of the rub inside the body and neck cavities; then rub 1 1/2 Tbsp. all over the skin of the bird.
Open the can of beer and pour out (or drink), one inch of beer. Put the garlic and 1/2 Tbsp. rub in the beer can. Holding the chicken upright, insert the beer can into the lower cavity.
Oil the grill grate. Stand the chicken up in the center of the hot grate, over the drip pan. Spread out the legs to form a sort of tripod, to support the bird. Cover the grill and cook the chicken until done. The internal temperature should be 180 degrees.
