Marinated Mushrooms

INGREDIENTS
  • 1 1/2 lb. medium mushrooms – halved
  • 3/4 C. olive oil
  • 1/3 C. red wine vinegar
  • 1 1/2 tsp. salt
  • 3/4 tsp. sugar
  • 1/2 tsp. basil
  • 1/8 tsp. thyme
  • 6 peppercorns
  • 1 bay leaf
  • 1 clove garlic – halved
INSTRUCTIONS

Place all ingredients, except mushrooms, in a medium skillet. Bring to a boil over medium heat. Reduce heat, cover and simmer 10 minutes. Stir in mushrooms until completely coated. Cook for 3-5 minutes at medium heat until fork tender. Cool and refrigerate. Keep in a 1 qt. jar.
