SALAD
- 10 oz. fresh spinach
- 6 slices lean bacon cooked til crisp
- 1 bunch scallions sliced finely
- 1/4 lb. mushrooms sliced finely
Trim and wash spinach. Dry and place in salad bowl. Crumble bacon, scallions and mushrooms over spinach. Chill.
DRESSING
- 5 Tbsp. wine vinegar
- 6 Tbsp. olive or Wesson oil
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1 garlic clove, finely minced
- 1/8 tsp. dry mustard
- 1/4 tsp. sugar
- 1 egg yolk
Combine dressing ingredients and blend well; chill. Dress salad just before serving.
