Spinach & Mushroom Salad

SALAD
  • 10 oz. fresh spinach
  • 6 slices lean bacon cooked til crisp
  • 1 bunch scallions sliced finely
  • 1/4 lb. mushrooms sliced finely

Trim and wash spinach. Dry and place in salad bowl. Crumble bacon, scallions and mushrooms over spinach. Chill.

DRESSING
  • 5 Tbsp. wine vinegar
  • 6 Tbsp. olive or Wesson oil
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 garlic clove, finely minced
  • 1/8 tsp. dry mustard
  • 1/4 tsp. sugar
  • 1 egg yolk

Combine dressing ingredients and blend well; chill. Dress salad just before serving.
