Seafood Gumbo

INGREDIENTS
  • 1/4 C. butter
  • 1 med. carrot – chopped
  • 3 Tbsp. flour
  • 2 Tbsp. tomato paste
  • 1 (16-oz.) can whole tomatoes in juice
  • 1 C. water
  • 1 (10-oz.) pkg. frozen cut okra
  • 1/2 C. finely chopped scallion
  • 1 Tbsp. Worcestershire sauce
  • 1/4 tsp. thyma
  • 1/2 tsp. basil
  • 1/8 tsp. Tabasco
  • 1/8 tsp. ground red pepper
  • 1/8 tsp. salt
  • 1/2 lb. shrimp
  • 1 (6-oz.) pkg. frozen crabmeat
  • 1 (8-oz.) can oysters – undrained
  • 1/4 C. parsley – finely chopped
INSTRUCTIONS

In a large saucepan, melt butter over medium heat. Add carrots, cook, stirring frequently, 3 – 5 minutes until soft. Stir in flour until smooth. Cook for one minute, stir in tomatoes in juice, tomato paste and water. Bring to a boil stirring constantly until smooth. Add okra, scallion and seasonings. Reduce heat, cover and simmer 15 minutes. Add shrimp, crabmeat and oysters with liquid. Cook 5 – 8 minutes until seafood is tender. Remove from heat and let stand, covered 10 minutes. Stir in parsley.
