DRESSING
- 1/4 C. red wine vinegar
- 1/4 C. soy sauce
- 3 Tbsp. sesame oil
- 2 Tbsp. sugar
- 1 Tbsp. fresh ginger – finely chopped
- 3 cloves garlic – minced
- 1/4 tsp. black pepper
Prepare dressing two hours ahead. Mix well and refrigerate until ready to use.
SALAD
- 10 oz. thin spaghetti
- 4 oz. fresh pea pods
- 6 green onions – chopped
- 2 red peppers – chopped
- 1 green pepper – chopped
Cook spaghetti according to package directions, drain. Remove strings from the pea pods, place in boiling water for one minute, drain. Combine all ingredients. Pour dressing over and mix well. Mushrooms, cauliflower or broccoli may also be added.
