INGREDIENTS
- 1 lg onion
- 3 cloves garlic – minced
- 1 green pepper – chopped
- 3 stalks celery – sliced
- 1 C. diced tomato
- 4 C. water
- 1 C. white wine
- 4 tsp. chicken bouillon
- 1 tsp. oregano
- 1 bay leaf
- 1/2 tsp. thyme
- 1/2 tsp. cayenne
- 4 oz. chopped green chilies
- salt and pepper
- Tabasco
- lemon juice
- 3 carrots – sliced
- 3 potatoes – cubed
- 1 – 1 1/2 lbs. red snapper, cod or other heavy fish
INSTRUCTIONS
Saute the first five ingredients together. Combine the sauteed vegetables, the water, wine and seasonings in large soup pan. Add Tabasco, lemon juice and salt and pepper to taste. Bring to a boil, simmer for 20 minutes. Add the carrots and potatoes and boil an additional 15 minutes. Add fish and simmer 15 more.
