Deb’s Caesar Salad

Step 1) Mix dressing:
  • 3/4 C. olive oil
  • 3 Tbsp. red wine vinegar
  • 1 tsp. Worcestershire
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 2 cloves garlic
  • 1 coddled egg (hardboiled egg cooked in vinegar)
  • ground pepper
  • 1 lemon, halved
  • 1/4 C. grated Parmesean
  • anchovy paste to taste (optional)
Step 2) Toss dressing into:
  • 1 lg. head of romaine lettuce, chopped
Step 3) Top with:
  • 1 can anchovies
  • croutons
