INGREDIENTS
- 1 Cup raw long grain brown rice
- 1 (10z) pkg. frozen peas
- 3/4 lb. cooked shrimp cut in bit size pieces
- 1 lg. carrot, cut lengthwise in thin strips and finely chopped
- 3 scallions thinly sliced
- 2 Tbsp. olive oil
- 2 Tbsp. reduced sodium soy sauce
- 1/2 tsp. black pepper
INSTRUCTIONS
Cook rice according to package, without adding any butter or salt. Transfer hot rice to a large bowl, add the peas and mix gently. Add shrimp, carrots and scallions and mix gently. Sprinkle oil, soy sauce and pepper over salad and mix gently.
